For Beef
- 140 grams (4.94 oz) Beef Flank Steak or Beef Skirt Steak
- 1 tsp Light Soy Sauce
- 1 tsp Rice Wine
- 1 tsp Cornstarch
- 1 tbsp Water
- 1 pinch Salt
- 1 tsp Vegetable Oil
Other Ingredients
- 450 grams (15.87 oz) Rice Noodle Sa-ho Fun
- 2 tbsp Vegetable Oil
- 60 grams (2.12 oz) Bean Sprout
- 1/4 pc Onion Thinly sized
- 30 grams (1.06 oz) Garlic chive – Oriental Garlic – Asian Chive – Chinese Chive – Chinese Leek
- 1 tbsp Dark Soy Sauce
- 1 tbsp Light Soy Sauce
Instructions
Preparation
Prepare and measure all ingredients accurately ahead of time.
Marinate
Prepare the beef. Make sure to slice it against the grain, then mix it with soy sauce, rice wine, water, sugar, and cornstarch. Add the vegetable oil, mix well with the beef and let it rest for about 15 minutes.
Rice Noodles
You may use either fresh or dried Sa-ho fun (noodles). For fresh noodles, separate the strands carefully using your hand. Be careful not to break it. For dried, you may follow the cooking instruction written on the packaging.
Frying
Over medium fire, add oil into the wok and stir-fry the marinated beef. Cook until the beef becomes pale in color. Make sure not to overcook it. Remove the beef.
Using the same oil and wok, stir fry the Sa-ho fun (noodles). Use chopsticks to avoid breaking the noodles.
Once the noodles are starting to cook, add the bean sprout and the onion. Stir-fry for another 30 seconds or more until cooked.
Add the beef and Chinese chives, pour the light and dark soy sauce and stir fry for another 30 seconds.
