Last Friday, Leah and I (and Meg) had a lazy day at home. We decided to wear our pajamas, watch movies, read books, nap, and even eat lunch in my bed. It was such a great day… something that we don’t do very often, but well worth taking the day off. As we were feasting on our stovetop buttered popcorn and watching one of Leah’s favorite movies, I started thinking about what a luxury it was to take a day off like this. Then I started thinking about the farmers I know, and I imagined that they probably never have days where they can just ignore their responsibilities and veg.

Farmers are some of the hardest working people I know. In fact, when I used to be a recruiter and worked in Human Resources, I always knew when someone who grew up on a farm was hired, they would tend to out perform most of the other people we hired. The work ethic of farmers and their kids is so much different than that of people who don’t have farm experience. My husband grew up on a farm and he’s always telling our kids how lucky they have it… his after school time and weekends on the farm were spent waking up super early every day and doing chores. That’s drastically different than what my kids experience.

Growing up in Kansas, I’ve been surrounded by farmers my whole life. I’ve known so many families, like The Bellar’s…Pork Farmers from Elk County, KS. It’s pretty cool to know people who have had multiple generations devote their lives to providing high quality food for consumers through farming. Knowing what tough work it is, you know they absolutely have to love their jobs to keep on doing it. I’m thankful for all the farmers out there who work tirelessly every day so we can eat!

I’ve teamed up with a few other bloggers to bring you a tasty recipe using some wonderful Kansas Pork. The Bacon Cheddar Bay Beer Bread Biscuits were made out of curiosity on my part, to be honest with you. I always felt like true Cheddar Bay Biscuits were missing something…that something being bacon. I also love the flavor a bottle of beer adds to bread. I thought I’d combine two of my favorite breads (this Buttery Beer Bread recipe is my favorite!) into one to see how they turned out.

It was an experiment well worth trying because these quick bread biscuits turned out to be absolutely fantastic. They are tender and full of such amazing flavors, and are the perfect accompaniment to a hearty bowl of soup or chili. I hope you’ll give this recipe a try! Enjoy!

Beer bread and Cheddar Bay Biscuits come together to make a Bacon Cheddar Bay Beer Bread Biscuit recipe. This is the perfect quick bread recipe to accompany a bowl of hot soup or chili!

Servings 16 -24 biscuits

Ingredients

  • 2 cups All-Purpose Flour
  • 1 1/2 teaspoons Baking Powder
  • 1 teaspoon Kosher salt
  • 1/4 cup butter flavored Crisco
  • 12 ounces beer I used Shiner Bock
  • 10 slices Thick Cut Bacon fried and crumbled
  • 1 cup Mild Cheddar Cheese shredded
  • 3 Tablespoons butter melted
  • 1 Tablespoon Tabasco sauce

Instructions

  • Sift together the flour, baking powder and salt. Use a pastry cutter to cut in the shortening until it is all combined.

  • Slowly pour in the beer. Stir until well combined.

  • Stir in crumbled bacon and cheddar cheese. Combine.

  • Using a small ice cream scoop, scoop out dough and place on a Silpat lined baking sheet (or a baking sheet lightly sprayed with Pam Cooking Spray). Bake in a preheated 375° oven for 20 minutes or until golden brown.

  • While the biscuits are baking, combine melted butter and Tabasco sauce. Remove the baked biscuits from the oven and brush each with the Tabasco/Butter mixture. Place the biscuits back into the oven for 2-3 minutes. Serve warm.
